Waldemar Holowka – Chef

Born in 1959, Holowka has been tied to the culinary and hospitality sector since he was 21 years old.

He finished his culinary studies in Tomaszów Mazowiecki in 1981, graduated with a bachelor’s degree in hospitality and catering in Poznań in 2002, and again in 2004 from the faculty of tourism in the School of Economics in Warsaw.

His road to success was long, with him passing through all of the catering stages: he was a waiter, bartender, assistant cook, chef, deputy executive, director of gastronomy, and finally president of the company and recreation at a hotel in Szczawno Zdrój (2003 – 2010).

He is one of the founders of the Foundation of Chefs, as well as of the Association of Chefs and Confectioners, and was the vide-president of the Association of Polish Chefs and Bakers in  Łódź.

He is also one of the founders of the foundation for Polish  Prestige Hotel’s and Resorts, and the foundation for the Promotion of Polish Food.

In 2004 he was awarded the Bronze Cross of Merit by the President of Poland for his efforts in popularising kitchen culture in Poland, and his actions to support the local environment.

Also in 2004, he won the “Simply the Best” contest in the category “the best three star hotel”. The hotel was awarded, whilst Waldemar Hołówkan was acknowledged as the best hotel manager in Poland.

In the same year, he was awarded by the Ministry of Tourism for “his merits towards tourism”. He was recognised for his efforts regarding the development of tourism, both in Poland and abroad.

In 2006 he recieved the title “Friend of the Dream School 2006” in an national project, for his actions in promoting equality of education for children from the countryside.

He also recieved the Wawrzyniec 2006 figurine for his promotion of Polish culinary art and the cooking profession.

In the meantime he undertook many other projects, for example participating in cooking competitions (some of which he organised). He has been a judge several times for culinary competitions, and has represented Poland as the President of the Academy Bocuse d’Or during the European elimination in Stawanger, Norway (2008), to the final final competition in Lyon.

Since 2005 he has been the co-owner of the catering group Centrum –  Południe, which deals with the organisation of events, large parties, and VIP catering. Some of the company’s activities include: OsiR Gastronomy Centre Góra Kamieńsk – “Restaurant under the Willmills”, the gourmet operator at Kaufland Distribution Centre in Rokszyce (near Piotrków Trybunalski), and the gourmet operator at the JYSK Distribution Centre in Radomsko.

Polish cusine both modern and traditional, court cuisine, and hunting cuisine are some of the themes that are particularly close to him – for a while he worked in the castles at Baranów Sandomierski and Krasiczyn. It was there that he began to organise the Court Cuisine Festival and the Culinary Presentation of the Regions. It should be noted that he continues to organise the International Court Cuisine Festival at the Dubieck Castle. The new edition is based solely on hunting cuisine.

 

Waldemar Hołówka is an expert in regards to good food. He promotes court and hunting cuisine, and for many years is himself a hunter, spending his free time going hunting in the forests of lower Silesia.

His main aim is to train industry professionals in the gastronomy and hotel sector, and to promote the culture and tradition of Polish cuisine, as well as the development of tourism, especially in the lower Silessia region.

His true passion is organising interesting culinary events in Poland, as a way of sustaining the Polish culinary culture.

Since January 2016 he has been the secretary and treasurer of the Foundation of Chefs.
